HONEYED PANNA COTTA WITH MANGO

Serves : 6 servings

INGREDIENTS
  • 1 envelope unflavored gelatin
  • 1 1/2 cups heavy cream
  • 1/3 cup organic wildflower honey
  • 1 cup organic whole milk
  • 1 teaspoon organic pure vanilla extract
  • 1 large mango peeled, pitted and cut into 1/4
  • zest of 1 lime
  • 1 tablespoon organic fresh mint chopped

DIRECTIONS

In a small bowl sprinkle gelatin over 3 tablespoons cold water. Let sit 5 minutes.

In a small saucepan combine cream and honey. Bring to a simmer over medium heat, stirring frequently. Take off heat and whisk in gelatin mixture until dissolved. Whisk in milk and vanilla.

Divide panna cotta among 6 small cups or glasses. Cover and refrigerate until set, at least 4 hours or up to overnight.

Just before serving, in a medium bowl stir to combine mango, lime zest and juice, and mint.

To serve, spoon a little mango mixture onto each panna cotta.
