
PEPPERMINT HOT CHOCOLATE



INGREDIENTS
- 1/2 cup heavy cream
- 3 cups milk
- 3/4 cup organic semi-sweet chocolate chips
- 1 tablespoon Turbinado raw sugar
- 1 teaspoon organic pure vanilla extract
- 1/4 teaspoon peppermint extract
- 2 tablespoons peppermint round candies crushed
DIRECTIONS
In a medium bowl, beat cream with a hand mixer until stiffly whipped but not grainy. Set aside.
In a medium saucepan, heat milk over medium-low heat until just simmering.
Add 1/2 cup of chocolate chips, sugar, vanilla and peppermint extract. Whisk constantly until chocolate is melted.
In a small microwave-safe bowl, melt remaining 1/4 cup of chocolate chips on high power stopping every 15 seconds to stir.
Dip the rim of each mug in the chocolate, then in the crushed peppermint candies.
Divide hot chocolate between the mugs. Top with whipped cream.
