PULLED PORK SOFT TACOS

INGREDIENTS
  • 2 lbs boneless pork loin roast (Pulled pork)
  • 2 tablespoon brown sugar (Pulled pork)
  • 1 tablespoon ground ginger (Pulled pork)
  • 2 clove smashed garlic (Pulled pork)
  • 1 small coarsely chopped white onion (Pulled pork)
  • 1/2 cup orange juice (Pulled pork)
  • 2 large limes cut in half (Pulled pork)
  • 12 large soft taco flour tortillas or corn tortillas (Tacos)
  • 1 1/2 cup reduced fat shredded colby jack cheese (Tacos)
  • 1/2 cup fat free sour cream (Tacos)
  • 1 teaspoon cumin (Tacos)
  • 2 small scallions, finely chopped (Tacos)
  • 8 oz shredded red cabbage (Tacos)
  • 3/4 cup salsa (Tacos)

DIRECTIONS

For pulled pork: Trip excess fat off roast. In a small bowl, combine brown sugar and ginger; rub generously over roast. Place in slow cooker with garlic, onion and orange juice; cook on low heat for 8 hours (or on high for 4-6 hours.)

For pulled pork: remove pork from slow cooker, transfer to large bowl and shred with forks. Strain pork liquid from slow cooker and pour over pulled pork to moisten. Squeeze lime juice on top and mix well. Divide into 12 servings.

For tacos: In small bowl, mix together sour cream, cumin and scallions.

For tacos: For each serving, cover corn tortilla with 2 tablespoons cheese; microwave for 20 seconds. Top with pulled pork, 2 teaspoons of sour cream mix, 1 1/2 tablespoons shredded cabbage and 1 tablespoon of salsa. Fold and serve immediately.
