
HELUVA GOOD! MARINATED CHICKEN SKEWERS



INGREDIENTS
- 2 large cooked chicken breast
- 1/2 cup Heluva! Good refrigerated French onion dip
- 1 large lemon zested and juiced
- 2 tbsp whole-grain mustard
- 1 clove garlic minced
- 1/2 cup olive oil
- 2 tbsp fresh parsley
- 4 large wooden skewers
DIRECTIONS
Slice each chicken breast lengthwise to create about 4" x 1/2 slices. In a food safe plastic bag, combine Heluva Good! dip, lemon juice and zest, whole grain mustard, minced garlic clove, olive oil, and chopped herbs. Shake to mix well. Add the chicken slices and let them marinate in the fridge for at least 4 hours. Soak the wooden skewers in water for later use.
Pre-heat oven to 375F. Skewer each piece of chicken in a zig zag pattern to secure the meat on the stick. Heat a flat top griddle to medium high and sear each side of the chicken skewers, about 1-2 minutes each side. When they have taken on a nice golden color, place them on a tray and finish cooking in the oven about 8-10 minutes, or until they are cooked through. As an option, mix Heluva Good! French Onion Dip with some buttermilk to make a finishing sauce for drizzling.
