MEATBALL STROGANOFF

INGREDIENTS
  • 6 cups Essential Everyday wide egg noodles
  • 1 (24 ounce)bag Essential Everyday frozen Italian style meatballs
  • 1 tablespoon Essential Everyday Culinary Circle Extra Virgin Olive Oil
  • 3 cups Essential Everyday beef broth
  • 2 cups Essential Everyday heavy cream
  • 1 cup Essential Everyday sour cream
  • 2 teaspoons Essential Everyday dried parsley
  • 2 teaspoons Essential Everyday dried Italian seasoning

DIRECTIONS

In a 6-8 quart stock pot, bring 4 quarts of water to a boil. Add salt, if desired. Cook pasta until al dente; drain.

In a large skillet, heat oil over medium-high heat. Add meatballs and brown all sides; remove from pan.

Add beef broth, stirring to loosen browned bits from pan. Add seasonings and cook until liquid is reduced to 1 cup, 6-8 minutes.

Add meatballs, noodles and cream. Bring to a boil and simmer until sauce is slightly thickened, 3-5 minutes.

Stir in sour cream and serve.
