
GERMAN POTATO SALAD



INGREDIENTS
- 1 pound Essential Everyday hardwood smoked bacon diced
- 5 pounds Wild Harvest organic red potatoes diced
- 2 Wild Harvest organic yellow onion sliced
- 1/4 cup Essential Everyday cider vinegar
- 2 tablespoons Wild Harvest organic parsley chopped
- 2 tablespoons kosher salt
- 2 tablespoons black pepper
DIRECTIONS
Fill a large stock pot with cold water. Add diced potatoes and bring to a boil. Cook potatoes until soft, drain and cool.
While the potatoes are cooling, place diced bacon in a large nonstick saute pan. Cook over medium-high heat until bacon is crisp, about 10-12 minutes.
Remove bacon from pan and set aside, leaving the bacon grease in the pan. Add onions to the bacon grease and cook until caramelized, about 6-7 minutes.
Once onions are caramelized, add the cooked potatoes, cider vinegar, salt and pepper. Continue to cook until potatoes are heated through.
Garnish with fresh chopped parsley.
