CURRIED GARBANZO BEAN SALAD


Serves : 6

INGREDIENTS
  • 1 tablespoon McCormick Gourmet Collection curry powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Le Saunier de Camargue fleur de sel sea salt
  • 1 large clove Melissas organic garlic minced
  • 1/4 cup Stonyfield organic 0 plain Greek yogurt
  • 1/4 cup fresh lime juice
  • 2 tablespoons Napa Valley organic olive oil
  • 2 cans Organic garbanzo beans rinsed and drained
  • 1 cup Del Cabo organic sweet 100 cherry tomatoes halved
  • 1/2 cup chopped cilantro leaves
  • 1/2 cup Ready Pac shredded carrots
  • 4 scallions thinly sliced
  • 1 5 ounce package Gelsons Finest organic arugula
  • 1/2 cup pomegranate seeds
  • 1/2 ripe avocado diced small

DIRECTIONS

In a small bowl combine curry powder, cinnamon, pepper, salt, garlic, yogurt, lime juice, and olive oil. Set aside while you make the salad.

In a salad bowl combine the remaining ingredients. Toss with dressing before serving.
