
CURRIED GARBANZO BEAN SALAD

INGREDIENTS
- 1 tablespoon McCormick Gourmet Collection curry powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon black pepper
- 1/4 teaspoon Le Saunier de Camargue fleur de sel sea salt
- 1 large clove Melissas organic garlic minced
- 1/4 cup Stonyfield organic 0 plain Greek yogurt
- 1/4 cup fresh lime juice
- 2 tablespoons Napa Valley organic olive oil
- 2 cans Organic garbanzo beans rinsed and drained
- 1 cup Del Cabo organic sweet 100 cherry tomatoes halved
- 1/2 cup chopped cilantro leaves
- 1/2 cup Ready Pac shredded carrots
- 4 scallions thinly sliced
- 1 5 ounce package Gelsons Finest organic arugula
- 1/2 cup pomegranate seeds
- 1/2 ripe avocado diced small
DIRECTIONS
In a small bowl combine curry powder, cinnamon, pepper, salt, garlic, yogurt, lime juice, and olive oil. Set aside while you make the salad.
In a salad bowl combine the remaining ingredients. Toss with dressing before serving.
