MEDITERRANEAN TUNA SALAD


Serves : 4

INGREDIENTS
  • 1 5 ounce can Wild Planet no salt added premium albacore tuna
  • 2 tablespoons Napa Valley organic olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Monari Federzoni red wine vinegar
  • 2 medium cloves Melissas organic garlic minced
  • 1/3 cup red onion diced small
  • 2 tablespoons minced Italian parsley leaves
  • 1 heaping tablespoon fresh minced basil
  • 1/4 teaspoon Le Saunier de Camargne Fleur de Sel sea salt
  • 1/4 teaspoon black pepper
  • 1 14 ounce can Carmelina white beans rinsed and drained
  • 1/2 cup Del Cabo organic sweet 100 cherry tomatoes halved

DIRECTIONS

Open the can of tuna and drain liquid into a medium sized mixing bowl. Add olive oil, lemon juice, vinegar, garlic, onion, parsley, basil, salt and pepper. Whisk together and add tuna. Break tuna up with a fork and mix in white beans and tomatoes.
