PUMPKIN BARS


Serves : 12

INGREDIENTS
  • 4 large eggs
  • 1 2/3 Cups Sugar
  • 1 cup canola oil
  • 2 cups Canned Pumpkin
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • Topping
  • 3 ounces cream cheese
  • 1/2 cup unsalted butter
  • 2 teaspoons orange extract
  • 2 cups powdered sugar

DIRECTIONS

Pre heat oven to 350° F.

In a mixer, beat the eggs sugar and oil. Add the pumpkin and beat until smooth, add the baking powder, baking soda, flour and spices.

Pour batter into a greased 10 inchX15 inch jelly roll pan. Bake for 25 to 30 minutes, or until a toothpick comes out clean when inserted.

Cool and frost. Cut into 2 inchX7 1/2 inch bars and serve.

PRESENTATION NOTES:

Garnish each piece with orange rind curls.
