POACHED APRICOT YOGURT


Serves : 4

INGREDIENTS
  • 1 cup water
  • 1/3 cup honey
  • 1 teaspoon ground ginger
  • 8 fresh apricots halved pits removed
  • 4 cups Horizon Organic plain nonfat yogurt

DIRECTIONS

Combine water, honey, and ginger in a large, shallow saucepan with a lid. Bring to a boil over high heat and allow to boil for three minutes.

Reduce heat to medium low and place apricots cut side down in the pan. Cover and cook 5 to 10 minutes, until tender. Remove from heat and take out apricots with a slotted spoon or fork. Remove any skin from the fruit. Allow apricots and syrup to cool.

Stir syrup into yogurt. Place 1 cup of yogurt in each dessert bowl and top with 4 apricot halves.
