MIXED GRAIN SALAD WITH JARLSBERG


Serves : 4

INGREDIENTS
  • 2 cups defatted chicken stock broth or water
  • 1/2 cup brown rice
  • 1/2 cup wild rice
  • 2 tbsp orange juice concentrate
  • 1/4 cup red wine dressing
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1 1/2 cup diced Jarlsberg cheese

DIRECTIONS

Bring stock and grains to a boil, stir cover, and simmer for 40 minutes.

Stir in concentrate, dressing, cranberries, and raisins, cool.

Stir in Jarlsberg cheese.

Serve on Bibb lettuce with grated carrots.
