
MIXED GRAIN SALAD WITH JARLSBERG

INGREDIENTS
- 2 cups defatted chicken stock broth or water
- 1/2 cup brown rice
- 1/2 cup wild rice
- 2 tbsp orange juice concentrate
- 1/4 cup red wine dressing
- 1/2 cup dried cranberries
- 1/2 cup raisins
- 1 1/2 cup diced Jarlsberg cheese
DIRECTIONS
Bring stock and grains to a boil, stir cover, and simmer for 40 minutes.
Stir in concentrate, dressing, cranberries, and raisins, cool.
Stir in Jarlsberg cheese.
Serve on Bibb lettuce with grated carrots.
