BROILED SALMON FILLET WITH TANGY TOMATO SALSA


Serves : 4

INGREDIENTS
  • 5 large tomatoes chopped approx 4 1/2 cups
  • 1/2 cup red onion finely chopped
  • 2 tbsp fresh mint finely chopped
  • 2 tbsp fresh basil finely chopped
  • 2 tbsp jalapeno pepper seeded and finely chopped
  • 2 tbsp lime juice
  • 6 oz ea salmon fillets
  • 4 tbsp Dijon mustard
  • 1 tbsp pepper coarsely ground

DIRECTIONS

Combine first 6 ingredients in a bowl and mix together.

Place salmon on a broiler pan coated with cooking spray.

Spread the top of each fillet with mustard and sprinkle with pepper.

Broil for 10 minutes or until desired degree of doneness.

Let stand 2 minutes.
