
BROILED SALMON FILLET WITH TANGY TOMATO SALSA

INGREDIENTS
- 5 large tomatoes chopped approx 4 1/2 cups
- 1/2 cup red onion finely chopped
- 2 tbsp fresh mint finely chopped
- 2 tbsp fresh basil finely chopped
- 2 tbsp jalapeno pepper seeded and finely chopped
- 2 tbsp lime juice
- 6 oz ea salmon fillets
- 4 tbsp Dijon mustard
- 1 tbsp pepper coarsely ground
DIRECTIONS
Combine first 6 ingredients in a bowl and mix together.
Place salmon on a broiler pan coated with cooking spray.
Spread the top of each fillet with mustard and sprinkle with pepper.
Broil for 10 minutes or until desired degree of doneness.
Let stand 2 minutes.
