
LONG LEAF PORK LETTUCE WRAPS



INGREDIENTS
- 1 Smithfield boneless pork loin roast [ribeye]
- 12 Medium to Large romaine lettuce leaves
- 2 medium ripe avocados peeled and chopped
- 1 medium poblano pepper or bell pepper, chopped
- 1/2 bunch fresh cilantro
- 1 medium lime quartered
DIRECTIONS
Chop pork.
To assemble, spoon about a quarter cup pork down center of each lettuce leaf, top with 2 tablespoons avocado, 1 tablespoon pepper, and 1 or 2 sprigs cilantro.
Serve with lime wedges to squeeze over all.
