MEDITERRANEAN GRAIN BOWL

INGREDIENTS
  • 1 (6.75 ounce) box tri color quinoa
  • 1/2 cup organic grape tomatoes sliced in half
  • 1 cup organic baby spinach
  • 1/4 cup organic kalamata olives sliced in half
  • 1/4 cup Culinary Circle Crumbled Feta Cheese
  • 1/4 cup English cucumber diced
  • 1/4 cup roasted red pepper hummus
  • 3 tablespoons organic extra virgin olive oil
  • zest of 3 lemons
  • 1 teaspoon lemon juice fresh squeezed
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

DIRECTIONS

Prepare quinoa according to package directions.

Meanwhile, in a small bowl whisk hummus, olive oil, lemon juice, lemon zest, salt and pepper until combined. Set aside.

In 2 serving bowls, place � cup prepared quinoa in each. Divide toppings into each bowl.

Serve with the dressing on the side.
