PORK MEDALLIONS WITH ARTICHOKES

INGREDIENTS
  • 1 1 lb = 8 medallions pound boneless pork loin medallions
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 can (24 oz each) Hunt's® No Added Sugar Pasta Sauce
  • 1 can (14 oz each) artichoke hearts in water, drained, quartered
  • 2 green onions, cut into thin slices
  • 2 tablespoons chopped fresh parsley

DIRECTIONS

Sprinkle both sides of pork evenly with salt and pepper. Heat oil in large skillet over medium heat. Add pork; cook 2 minutes on each side, or until lightly browned on both sides.

Add pasta sauce, artichokes and onions; mix well. Reduce heat to low; simmer 10 minutes, or until heated through, stirring occasionally.

Sprinkle with parsley just before serving.
