
PAELLA PRONTO



INGREDIENTS
- 1/2 pound boneless skinless chicken breast, cut into bite-size pieces
- 8 ounces smoked sausage, cut into bite-size pieces
- 1/2 1 large = about 1 cup large onion, chopped
- 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
- 1 pkg (5 oz each) dry yellow rice with saffron
- 1 cup water
- 1 cup frozen green peas, thawed
- Chopped fresh cilantro, optional
DIRECTIONS
Cook chicken, sausage and onion in large nonstick skillet over medium-high heat 5 minutes or just until chicken is browned lightly on all sides, stirring frequently. Add undrained tomatoes, rice and water; mix well. Bring to a boil over high heat. Reduce heat to medium-low, cover and cook 20 minutes or until rice is tender and liquid is absorbed.
Stir in peas. Cook 1 minute more or until peas are hot. Sprinkle with cilantro before serving, if desired.
