
ORANGE-SPICED SWEET POTATO CASSEROLE



INGREDIENTS
- 5 5 large = 3-3/4 lb large sweet potatoes
- 1 teaspoon grated orange peel
- 1/3 cup fresh orange juice
- 3 tablespoons Fleischmann's® Original-stick, divided
- 3 tablespoons brown sugar, divided
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 cup Chopped Pecans
- 2 tablespoons all-purpose flour
DIRECTIONS
Preheat oven to 400°F. Scrub potatoes thoroughly with brush; pat dry. Pierce in several places with fork. Bake 1 hour, or until tender. Cool. Peel potatoes. Place in large bowl; mash with hand masher or electric mixer on medium speed until creamy. Add orange peel, orange juice, 2 tablespoons of the Fleischmann's, 2 tablespoons of the sugar, the cinnamon, cumin and salt; mix well.
Spoon into lightly greased 11x7-inch baking dish. Place remaining 1 tablespoon Fleischmann's in small microwavable bowl. Microwave on HIGH 15 seconds, or until melted. Add the remaining 1 tablespoon sugar, the pecans and flour; mix well. Sprinkle evenly over potato mixture.
Bake 30 minutes, or until hot. Let stand 5 minutes.
