OATMEAL BREAKFAST BREAD

INGREDIENTS
  • PAM® Baking Spray
  • 1-1/2 cups Ultragrain® All Purpose Flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1-1/2 teaspoons ground ginger
  • 3/4 cup chopped dried plums
  • 1-1/4 1% cups lowfat
  • 1/2 cup quick-cooking rolled oats
  • 3/4 cup granulated sugar
  • 1/2 1/2 cup = 1 stick cup Fleischmann's® Original-stick, melted
  • 1 ripe banana, mashed
  • 1 large egg, slightly beaten
  • 3/4 cup Chopped Pecans

DIRECTIONS

Preheat oven to 350°F. Spray 8-1/2 x 4-1/2-inch loaf pan with baking spray; set aside.

Combine flour, baking powder, baking soda, cinnamon and ginger in large bowl. Add dried plums to flour mixture, stirring to coat evenly; set aside.

Combine milk and oats in medium bowl. Let stand 10 minutes. Mix in sugar, Fleischmann's, banana and egg.

Gently stir milk mixture into flour mixture just until blended; fold in pecans.

Spread mixture evenly in prepared pan. Bake 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely on wire rack.
