MEXICAN CHICKEN SALAD STUFFED AVOCADOS

INGREDIENTS
  • 2 cups shredded cold rotisserie chicken
  • 1 can (10 oz each) Ro*TelĀ® Hot Diced Tomatoes with Habaneros, drained
  • 1/3 cup chopped celery
  • 1/3 cup light mayonnaise
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon ground black pepper
  • 3 large avocados, halved, pitted

DIRECTIONS

Combine chicken, drained tomatoes, celery, mayonnaise, cilantro, salt and pepper in medium bowl to make chicken salad.

Top each avocado half with 1/3 cup chicken salad.
