
LUSCIOUS LEMON WAFFLES



INGREDIENTS
- 1-3/4 cups Ultragrain® All Purpose Flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1/2 1 stick = 1/2 cup cup Parkay® Original-stick, melted
- 1/2 cup sour cream
- 1/2 2% cup reduced fat
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- 2 cups fresh fruit, such as blueberries, raspberries or sliced strawberries, optional
- Maple-flavored syrup and Reddi-wip® Original Dairy Whipped Topping, optional
DIRECTIONS
Preheat and prepare waffle iron according to manufacturer's directions. Combine flour, sugar, baking powder and salt in large bowl. Make a well in center; set aside.
Beat eggs, Parkay, sour cream, milk, lemon peel and lemon juice in medium bowl with wire whisk until well blended. Add to well in center of flour mixture; beat with wire whisk just until blended. (Do not overbeat.)
Pour about 1/2 cup batter onto center of waffle iron; close lid. Cook until golden brown. Repeat with remaining batter to make 8 waffles. Top with fruit and/or syrup and Reddi-wip, if desired.
