JAPANESE MARINATED SALMON FILLET

INGREDIENTS
  • 1 pound salmon fillet, 3/4-inch thick, cut into 4 pieces
  • 2 tablespoons La Choy® Lite Soy Sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon firmly packed brown sugar
  • 1 cloves garlic, minced
  • 1 1 med = about 1/2 cup medium carrot, cut into thin strips
  • 1/2 cup thinly sliced leek
  • 2 cups hot cooked brown rice

DIRECTIONS

Arrange salmon, skin-sides up, in 8x8-inch baking dish; set aside. Mix soy sauce, lemon juice, sugar and garlic in medium bowl until sugar is dissolved. Pour over salmon; turn salmon over to evenly coat both sides of each piece. Cover dish with aluminum foil. Refrigerate 1 hour to marinate.

Preheat oven to 375°F. Turn salmon pieces over. Spoon carrots and leeks evenly over salmon. Re-cover dish with foil.

Bake 20 minutes, or until salmon is firm and opaque and just begins to flake easily when tested with fork. Serve over hot cooked brown rice.
