
HOT TURKEY SALAD



INGREDIENTS
- 1/4 cup light mayonnaise
- 1/4 cup orange juice
- 1 tablespoon honey
- 1/4 teaspoon ground mustard
- PAM® Grilling Spray
- 1 pkg (20 oz each) boneless turkey breast tenderloins
- 1 tablespoon Pure Wesson® Canola Oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 cups torn mixed salad greens
- 1 cup seedless red grapes
- 8 large strawberries, sliced
- 1 kiwi fruit, peeled, sliced
- 1 small yellow summer squash, halved lengthwise, sliced
DIRECTIONS
Preheat broiler. Beat mayonnaise, orange juice, honey and mustard in small bowl with wire whisk until well blended; cover. Refrigerate until ready to use.
Spray rack of broiler pan with grilling spray. Brush turkey with oil; sprinkle with salt and pepper. Broil 25 to 30 minutes or until centers of tenderloins are no longer pink and juices run clear (165°F), turning after 15 minutes.
Divide salad greens evenly among 4 serving plates. Arrange grapes, strawberries, kiwi and squash around edges of covered plates. Cut turkey into 1/2-inch-thick slices; arrange over greens. Drizzle evenly with the mayonnaise mixture.
