HOT MUSHROOM BITES

INGREDIENTS
  • 2 tablespoons Fleischmann's® Original-stick
  • 12 12 oz = about 2 cups ounces fresh sliced mushrooms
  • 1/3 cup chopped onion
  • 1/3 cup chopped red bell pepper
  • 1/4 cup fresh chopped parsley
  • 2 tablespoons cream sherry
  • 1 tablespoon all-purpose flour
  • 32 Melba toast rounds
  • 1/2 1/2 cup = 4 oz cup shredded Swiss cheese
  • Fresh parsley sprigs, optional

DIRECTIONS

Preheat broiler. Melt Fleischmann's in large skillet over medium heat. Add mushrooms and onion; cook 5 minutes or until onions are tender, stirring frequently. Add bell peppers and chopped parsley; stir.

Add sherry and flour; mix well. Cook 5 minutes or until mixture thickens, stirring constantly. Spoon about 1 tablespoon mushroom mixture on each toast round. Sprinkle evenly with cheese. Place on baking sheet.

Broil, about 5 inches from heat source, 2 minutes or until cheese is melted. Garnish with parsley sprigs, if desired.
