GRILLED CORN WITH CHIVE SPREAD

INGREDIENTS
  • 4 medium ears fresh sweet corn, with husks
  • 1/4 cup Blue Bonnet®-stick
  • 2 tablespoons chopped fresh chives or green onion tops
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

DIRECTIONS

Prepare corn for grilling. Peel back husks, leaving husks attached to base of ear. Remove and discard corn silks from ear of corn. Reserve a thin strand of inner cornhusk from each ear; bring attached husks back up over each ear; tie with reserved strips of cornhusk. Soak corn in cold water to cover at least 20 minutes.

Preheat grill according to manufacturer directions.

Combine Blue Bonnet, chives, salt and pepper in small bowl to make spread; mix well. Refrigerate until ready to use.

Drain off water. Keeping husk intact around corn, place corn directly on grill grid over medium heat. Grill 20 to 25 minutes or until corn is tender, turning twice. Carefully pull back, twist and remove husks; spread with chive spread.
