GREEN BEANS WITH CARAMELIZED ONIONS AND ALMONDS

INGREDIENTS
  • 2 pounds fresh green beans, trimmed
  • 1 teaspoon salt, divided
  • 1/4 cup Parkay® Original-stick
  • 2 medium red onion, halved and thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon freshly ground pepper
  • 1/4 cup sliced almonds, toasted

DIRECTIONS

Place beans and 1/2 teaspoon of the salt in medium saucepan. Cover beans with water; bring to a boil over medium-high heat. Cover pan and cook 4 to 5 minutes or until crisp-tender. Drain.

Melt Parkay in large skillet over medium heat. Add onions and cook, stirring frequently, 20 to 25 minutes or until golden. Stir in vinegar, the remaining 1/2 teaspoon salt and the pepper. Add green beans; cover and cook 2 minutes. Sprinkle with almonds and serve immediately.
