GREEK SPINACH PIE

INGREDIENTS
  • PAM® Butter No-Stick Cooking Spray
  • 1 1 cup = 8 oz cup Egg Beaters® Original
  • 2 cups low fat cottage cheese
  • 3/4 3/4 cup = 3 oz cup crumbled feta cheese
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 pkgs (10 oz each) frozen chopped spinach, thawed, well drained
  • 16 14x9-inch sheet sheets frozen phyllo dough, thawed
  • 1/4 cup Pure Wesson® Canola Oil

DIRECTIONS

Preheat oven to 350°F. Spray 13x9-inch baking dish with cooking spray.

Beat Egg Beaters, cottage cheese, feta cheese, pepper and nutmeg in large bowl until blended. Fold in spinach; set aside.

Place 1 phyllo sheet in bottom of prepared dish. Brush lightly with oil. Repeat layering 7 more phyllo sheets, continuing to brush each sheet with more oil. Spoon spinach mixture over phyllo sheets.

Top with remaining 8 phyllo sheets, continuing to brush each sheet with more oil. Bake 40 minutes or until golden brown.
