
FLORENTINE FRITTATA



INGREDIENTS
- PAMĀ® Original No-Stick Cooking Spray
- 1 cup refrigerated shredded hash brown potatoes
- 1-1/2 cups chopped baby spinach leaves
- 1/4 cup chopped yellow onion
- 1/4 cup chopped green bell pepper
- 1/8 teaspoon ground black pepper
- 3 tablespoons Culinary Circle Grated Parmesan Cheese
- 1 carton (16 oz each) Egg BeatersĀ® Original
DIRECTIONS
Spray 10-inch nonstick saute pan with cooking spray; heat over medium heat. Add potatoes; cook 3 to 4 minutes or until hot. Add spinach, onion, bell pepper and black pepper; cook until vegetables are tender, stirring occasionally.
Spread potato mixture evenly in skillet. Sprinkle with cheese. Pour Egg Beaters over potato mixture; cover skillet and reduce heat to medium-low. Cook 10 to 15 minutes or until set.
