FESTIVE SUGAR COOKIES

INGREDIENTS
  • 1 1 cup = 2 sticks cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • PAM® Baking Spray
  • 1/4 cup colored sugar

DIRECTIONS

Beat butter and granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, vanilla and lemon extract; beat until well blended. Add 1 cup flour, the baking powder and salt; mix well. Gradually add the remaining 2 cups flour, beating after each addition until mixture is well blended and forms a soft dough. Divide dough into 3 balls; wrap individually in plastic wrap. Refrigerate at least 2 hours, or until chilled.

Preheat oven to 375°F. Spray baking sheets and 2-inch cookie cutter with baking spray. Remove 1 ball of dough from refrigerator; roll out to 1/4-inch thickness on lightly floured surface. Cut out with prepared cookie cutter; sprinkle cutouts with colored sugar. Place, 1 inch apart, on prepared baking sheets. Repeat with remaining dough balls, spraying cookie cutter with additional cooking spray as needed.

Bake 8 to 10 minutes, or until edges of cookies are lightly browned. Remove to wire racks to cool.
