
EASY MEATBALL MINESTRONE



INGREDIENTS
- 4 cans (14 oz each) lower sodium beef broth
- 1 pkg (16 oz each) frozen mixed vegetables
- 1 pkg (12 oz each) frozen cooked meatballs
- 1 can (15 oz each) small white beans, drained, rinsed
- 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Green Pepper, Celery & Onions, undrained
- 1/4 cup Hunt's® Tomato Paste
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup small shell pasta
- Shredded Parmesan cheese, optional
DIRECTIONS
Combine broth, vegetables, meatballs, beans, tomatoes with their liquid, tomato paste, Italian seasoning, salt and pepper in large saucepan or Dutch oven.
Bring to a boil over high heat. Reduce heat to medium-high; add pasta. Cook for 15 minutes, stirring occasionally, or until pasta is tender. Garnish with cheese, if desired.
