CREAMY CAULIFLOWER PUREE

INGREDIENTS
  • 6 6 cups = about 1 large head cups chopped cauliflower
  • 1 cup ButterballĀ® Chicken Broth
  • 1 cloves garlic, minced
  • 2 tablespoons Fleischmann'sĀ® Original Spread-tub
  • 2 tablespoons sour cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Sliced green onions, optional

DIRECTIONS

Combine cauliflower, broth and garlic in large saucepan. Bring to a boil over medium heat. Reduce heat to low; cover pan with lid. Simmer 10 to 12 minutes, or until cauliflower is very tender.

Drain cauliflower, reserving 2 tablespoons of the liquid; place cauliflower and reserved liquid in food processor or blender container. Discard remaining cooking liquid. Add Fleischmann's, sour cream, salt and pepper to food processor container; cover. Puree until smooth.

Garnish with onions, if desired.
