
CORNED BEEF REUBEN NOODLE SKILLET



INGREDIENTS
- 8 ounces dry wide egg noodles, uncooked
- PAM® Original No-Stick Cooking Spray
- 3/4 cup chopped green bell pepper
- 1 can (12 oz each) Libby’s® Corned Beef with Onion
- 1 cup sauerkraut, rinsed, drained
- 1/2 cup Thousand Island dressing
- 1/3 2% cup reduced fat
- 1/8 teaspoon ground black pepper
- 1/2 cup shredded Swiss cheese
DIRECTIONS
Cook noodles according to package directions, omitting salt. Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.
Add bell pepper; cook 2 to 3 minutes or until tender. Add corned beef; cook 2 to 3 minutes more or until crumbled and browned lightly, stirring occasionally.
Add sauerkraut; stir to combine. Cook 1 to 2 minutes or until hot. Add dressing, milk, pepper and cooked noodles; stir gently to combine. Sprinkle with cheese.
