KALE RISOTTO

INGREDIENTS
  • 3 cups chicken broth
  • 2 tablespoons Culinary Circle Extra Virgin Olive Oil
  • 1/2 cup chopped onion
  • 1 tablespoon minced garlic
  • 1 cup frozen chopped kale
  • 1 cup Arborio rice
  • 1/2 cup white wine
  • 1/2 cup Culinary Circle Grated Parmesan Cheese

DIRECTIONS

Add chicken broth and wine to a small saucepan over medium-high heat; bring to a simmer. Reduce heat to keep warm.

Meanwhile, in large saucepan, heat oil over medium heat; add onions and garlic to pan; salt and pepper to taste. Sauté 2-3 minutes or until onions are softened. Add rice; sauté 3-5 minutes, being careful not to brown the rice.

Add 1 cup of warm broth and wine mixture; reduce heat to a simmer. Simmer, stirring frequently until liquid is absorbed. Continue process adding ½ cup broth at a time until all liquid is absorbed.

Remove from heat, stir in kale and Parmesan cheese. Add salt and pepper to taste.
