
FALL HARVEST APPLE SALAD



INGREDIENTS
- 4 cups fresh baby spinach leaves
- 1 red apple diced
- 1 green apple diced
- 1 bag dried cranberries & honey roasted pecans
- 4 ounces Culinary Circle Crumbled Feta Cheese
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon ground black pepper
- 1/4 cup Culinary Circle Extra Virgin Olive Oil
DIRECTIONS
For the dressing: in a small bowl, whisk vinegar, honey, mustard, and pepper. Slowly add the oil, stirring constantly, until well blended. Set aside.
In bowl add spinach, apples, and dressing, tossing until evenly coated.
Distribute evenly between 4 plates, top with feta cheese, and cranberries and honey roasted pecans. Serve immediately.
