GRILLED GOAT CHEESE CROSTINI II

INGREDIENTS
  • 1 large red onion chopped
  • 1 tablespoon Culinary Circle Extra Virgin Olive Oil
  • 1 loaf French baguette bread sliced diagonally (18 slices)
  • 2 garlic cloves peeled
  • 2 4 ounce (4 ounce) Culinary Circle Soft Goat Cheese room temperature
  • 2 tablespoons chopped fresh chives
  • 1 (3 ounce) package Culinary Circle Prosciutto sliced
  • - honey

DIRECTIONS

In medium skillet, over medium-low heat combine onions and 1 tablespoon oil. Cook until onions are golden brown and caramelized (about 20 minutes), stirring occasionally. Remove from heat; allow to cool to room temperature (can be made a couple hours ahead).

Meanwhile, prepare grill to medium heat. Brush both sides of baguette slices with olive oil. Place on grill; grill until both sides are lightly browned. Remove from grill. Pierce garlic clove with a fork; using fork, rub each baguette slice with garlic clove. Set aside to cool (can be made a couple hours ahead).

In small bowl, combine goat cheese and chives. Spread over baguette slices. Drizzle with honey; top with prosciutto slice and caramelized onions.

To Bake Crostini: Follow step 2 placing baguette slices on a large baking sheet. Bake in a preheated 400°F oven 8-10 minutes or until golden.
