GRILLED SALMON BLT

INGREDIENTS
  • 1 pound salmon fillets
  • 1 tablespoon 100% pure olive oil
  • 1 tablespoon fresh squeezed lemon juice
  • 1/2 cup light mayonnaise
  • 1/4 cup chopped fresh basil leaves
  • 1 teaspoon lemon zest
  • 1 teaspoon minced garlic
  • 6 Ciabatta rolls
  • 6 lettuce leaves
  • 6 tomato slices
  • 12 slices cooked bacon

DIRECTIONS

Prepare grill to medium heat. Pat salmon dry with clean paper towels. Rub salmon with olive oil and lemon juice; sprinkle with salt and pepper to taste. Place salmon on grill skin side up.

Grill until golden brown; carefully turn over and continue cooking until salmon flakes easily with a fork (about 10 minutes per inch of thickness).

Meanwhile, in a small bowl, combine mayonnaise, basil, lemon zest and garlic; salt and pepper to taste.

Lightly spray inside of rolls with cooking spray. Place on grill and cook until golden brown (about 1 minute). Remove from grill and spread with mayonnaise. Top with lettuce, tomato and bacon. Remove skin from salmon and divide salmon among sandwiches.
