
LOBSTER BLTS



INGREDIENTS
- 6 slices thick sliced bacon
- - ground black pepper
- 1/4 cup real mayonnaise
- 4 teaspoons chopped fresh tarragon
- 2 teaspoons lemon juice
- 2 teaspoons chopped shallots
- 1 teaspoon chopped garlic
- - dash cayenne pepper
- 8 ounces cooked lobster meat chopped
- 6 Ciabatta rolls
- 6 lettuce leaves
- 6 tomato slices
DIRECTIONS
Place bacon in large skillet over medium heat, sprinkle with desired amount of pepper; flip and sprinkle with additional pepper. Continue cooking until desired crispness is reached. Remove to paper towels and set aside.
In medium bowl, combine mayonnaise, tarragon, lemon juice, shallots, garlic and cayenne pepper. Gently toss with lobster meat.
Divide lobster among Ciabatta rolls, top with bacon, lettuce and tomato.
