
BBQ & JALAPENO CHICKEN SANDWICHES



INGREDIENTS
- 4 4 ounce boneless, skinless chicken breasts
- 1 medium red onion sliced inot 4 thick slices
- 1 tablespoon 100% pure olive oil
- 1 cup sweet 'n tangy spicy barbecue sauce
- 4 slices provolone cheese
- 4 Ciabatta rolls sliced in half
- 1 cup jalapeño flavored kettle chips broken
DIRECTIONS
Prepare grill to medium heat. Salt and pepper chicken breasts and onions to taste; drizzle onions with olive oil. Place chicken and onions on grill. Grill, turning occasionally 10-12 minutes or until chicken reaches 170°F on an instant read thermometer and onions are golden brown.
Baste chicken and onions with barbeque sauce last 5 minutes of grilling. Top chicken with cheese and remove from grill. Toast bread on grill.
Place chicken on bread, top with onions and broken up potato chips. Serve with additional barbeque sauce, if desired
