
KING CRAB CHOWDER



INGREDIENTS
- 1/2 pound bacon chopped
- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1/2 cup chopped red bell peppers
- 1 tablespoon chopped garlic
- 1 tablespoon Old Bay® seasoning
- 3 tablespoons all-purpose flour
- 3 cups reduced sodium chicken broth
- 1 pound baby red potatoes chopped
- 2 cups half & half
- 1 cup frozen super sweet corn
- 1 1/2 pound frozen king crab legs thawed, meat romoved
- 1 tablespoon chopped fresh thyme
DIRECTIONS
In large saucepan or Dutch oven, cook bacon over medium heat. When crisp, remove to paper towels to drain. Pour off excess bacon drippings, but dont clean out pan.
Return pan to stove over medium heat. Add butter; when melted, add onions, celery, red pepper, garlic and Old Bay. Sauté vegetables until tender (about 5-7 minutes).
Add flour; stir to coat vegetables. Cook 1 minute. Whisk in chicken broth. Add potatoes and bring to a simmer. Simmer 15-20 minutes or until potatoes are fork tender, stirring occasionally.
Add half & half and corn; bring to a simmer. Remove from heat. Stir in crab and thyme. Let stand 5 minutes before serving.
