
GARLIC SMASHED POTATOES
with Broccoli & Cauliflower



INGREDIENTS
- 2 pounds organic baby red potatoes cut into 1 1/2 inch cubes
- 15 garlic cloves peeled
- 1 32 ounce container organic low sodium chicken broth
- 1 16 ounce package frozen organic mixed vegetables
- 1/2 cup organic 2% reduced fat milk warmed
- 1 tablespoon organic butter
- - sea salt
- - ground black pepper
DIRECTIONS
In large saucepan over high heat, combine potatoes, garlic and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.
Add vegetables; continue simmering 10 minutes or until potatoes are fork tender.
Drain off chicken broth; reserving � cup. Add milk and butter to drained pan. Using a potato masher, smashed potatoes, adding reserved chicken broth as needed to reach desired consistency. Salt and pepper to taste.
