GARLIC SMASHED POTATOES

with Broccoli & Cauliflower

INGREDIENTS
  • 2 pounds organic baby red potatoes cut into 1 1/2 inch cubes
  • 15 garlic cloves peeled
  • 1 32 ounce container organic low sodium chicken broth
  • 1 16 ounce package frozen organic mixed vegetables
  • 1/2 cup organic 2% reduced fat milk warmed
  • 1 tablespoon organic butter
  • - sea salt
  • - ground black pepper

DIRECTIONS

In large saucepan over high heat, combine potatoes, garlic and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.

Add vegetables; continue simmering 10 minutes or until potatoes are fork tender.

Drain off chicken broth; reserving � cup. Add milk and butter to drained pan. Using a potato masher, smashed potatoes, adding reserved chicken broth as needed to reach desired consistency. Salt and pepper to taste.
