
CREAMY CHICKEN & RICE SOUP



INGREDIENTS
- 1 tablespoon organic extra virgin olive oil
- 1 cup chopped organic celery hearts
- 1 cup chopped onions
- 1 cup chopped organic baby carrots
- 1 tablespoon minced garlic
- 1 pound boneless, skinless chicken breasts cubed
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon organic dried thyme leaves
- 3/4 cup organic long grain white rice
- 1 32 ounce container organic low sodium chicken broth
- 2 cups organic 2% reduced fat milk
DIRECTIONS
In large saucepan, heat oil over medium-high heat. Add celery, onions, carrots and garlic. Sauté until onions are translucent.
Add chicken, poultry seasoning and thyme leaves. Salt and pepper to taste; sauté 2 minutes. Stir in rice; sauté 1 minute.
Add chicken broth; cook, stirring occasionally, until rice is cooked (about 20 minutes).
Stir in milk; bring to a simmer. Simmer 10 minutes.
