
MEDITERRANEAN HALIBUT



INGREDIENTS
- 1/2 cup chopped tomatoes
- 3 tablespoons Culinary Circle Crumbled Feta Cheese
- 1 1/2 tablespoons chopped fresh basil leaves divided
- 1 tablespoon capers
- 2 teaspoons balsamic vinegar
- 1 12 ounce package frozen halibut fillets thawed
- 1 tablespoon Culinary Circle Extra Virgin Olive Oil
- 2 teaspoons minced garlic
DIRECTIONS
In small bowl combine tomatoes, feta cheese, 1 tablespoon basil, capers, and vinegar; set aside.
Pat fish dry with clean paper towels. Prepare grill to medium heat. Combine olive oil, garlic and remaining basil. Rub both sides of fish with oil mixture.
Grill fish, turning once, until fish easily flakes with a fork (about 10 minutes per inch of thickness). Top grilled fish with tomato mixture.
