EASY ROASTED CHICKEN

INGREDIENTS
  • 1 (3-4 pound) whole fryer chicken
  • 1/4 cup organic rustic Italian dressing

DIRECTIONS

Rinse chicken; pat dry. Brush inside of chicken with Italian dressing.

Place chicken over an upright chicken roaster, turning legs behind the chicken to create a tri pod effect. Note: If you don’t have a roaster, the inside tube from an angel food tube pan placed in a 9-inch cake pan works great.

Brush outside of chicken with Italian dressing. Salt and pepper to taste.

Place chicken in a preheated 400°F oven for 1 hour, 15 minutes or until a thermometer inserted in the thigh reaches 180°F.

Carefully remove chicken from oven and allow to sit 10 minutes before carving.
