
PECAN CRUSTED CHICKEN



INGREDIENTS
- 1 cup finely crushed multigrain thin crackers
- 1/2 cup finely chopped pecans
- 3 tablespoons light mayonnaise
- 2 tablespoons Dijon mustard
- 4 4 ounce boneless, skinless chicken breasts
- - cooking spray
DIRECTIONS
Combine crushed crackers and pecans in a shallow dish; salt and pepper to taste. Combine mayonnaise and mustard in a second shallow dish.
Dip chicken in Dijon mayonnaise and coat with crackers. Place in a 13x9-inch baking dish that has been coated with cooking spray. Generously spray tops of chicken with additional cooking spray.
Bake in a preheated 375°F oven 20-25 minutes or until internal temperature reaches 170°F and juices run clear.
