MEDITERRANEAN CHICKEN & POTATOES

INGREDIENTS
  • 1 1/4 pounds boneless, skinless chicken thighs
  • 1 1/4 pounds baby red potatoes quartered
  • 1 cup Greek vinaigrette dressing
  • 1/2 cup dried plums quartered
  • 1/3 cup stuffed queen olives
  • 1 tablespoon chopped garlic
  • 1 tablespoon capers rinsed and drained

DIRECTIONS

Place chicken and potatoes in a greased 13x9-inch baking dish; salt and pepper to taste.

In small bowl, combine remaining ingredients. Pour over chicken.

Bake in a preheated 350°F oven 40-50 minutes or until potatoes are tender and chicken reaches an internal temperature of 180°F.
