GRILLED SALSA CHICKEN

INGREDIENTS
  • 1 pound boneless, skinless chicken breasts
  • 1/2 teaspoon chili powder
  • 1/2 cup thick and chunky salsa
  • 1/3 cup peach or apricot preserves
  • 1 tablespoon fresh squeezed lemon juice

DIRECTIONS

Prepare grill to medium heat. Lightly season chicken with chili powder; salt and pepper to taste.

Place chicken on grill; grill, turning once, 15-20 minutes or until internal temperature reaches 170°F on an instant read thermometer.

Meanwhile, in small bowl, combine remaining ingredients. Generously brush both sides of chicken with salsa mixture the last 5 minutes of grilling.
