GRILLED LEMON DIJON CHICKEN

Serves : 4 servings

INGREDIENTS
  • 2 pounds chicken breasts, thighs and/or wings
  • 1/4 cup 100% pure olive oil
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

DIRECTIONS

Combine all ingredients in a 1 or 2 gallon recloseable food storage bag; seal bag. Toss to coat chicken.

Refrigerate several hours or overnight, turning occasionally.

Prepare grill to medium heat. Remove chicken from bag; place on grill. Grill, turning occasionally; brushing with marinade occasionally for first 10 minutes ONLY. Discard remaining marinade.

Continue grilling until chicken reaches 170°F for breasts, 180°F for thighs on an instant read thermometer (about 25-45 minutes).
