PACIFIC RIM GRILLED CHICKEN LEGS

INGREDIENTS
  • 1/4 cup apricot preserves
  • 1/4 cup honey
  • 1 1/2 tablespoons less sodium soy sauce
  • 1 1/2 tablespoons pure vegetable oil
  • 1 tablespoon minced fresh gingerroot
  • 2 teaspoons chopped garlic
  • 1/2 teaspoon chili powder
  • 2 1/2 pounds chicken drumsticks

DIRECTIONS

In small bowl, combine apricot preserves, honey, soy sauce, oil, ginger, garlic and chili powder. Set aside.

Prepare grill to medium heat. Lightly season chicken with salt & pepper. Place on grill; grill 5 minutes, turning occasionally.

Brush chicken generously with glaze mixture. Continue grilling, turning occasionally and brushing with additional glaze, until chicken reaches an internal temperature of 180o F on an instant read thermometer (about 15 minutes). Discard any remaining glaze.
