CRUNCHY RANCH CHICKEN FINGERS

Total Time : 35 minutes + marinating
Serves : 4 servings

INGREDIENTS
  • 1 pound boneless, skinless chicken breast tenderloins
  • 1 cup creamy ranch dressing
  • 5 cups golden corn nuggets cereal
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • - cooking spray
  • - barbecue sauce, creamy ranch dressing or honey mustard

DIRECTIONS

Place chicken tenderloins and ranch dressing in a 1 gallon recloseable food storage bag. Seal bag; toss to coat. Place in refrigerator and marinate several hours or overnight.

In another food storage bag, combined cereal, salt and pepper; seal bag. Finely crush cereal using a rolling pin. Remove 2-3 chicken tenders from dressing and place in bag with the corn puffs; seal bag. Shake to coat tenders.

Remove from bag and place on a large baking sheet that has been generously sprayed with cooking spray. Repeat with remaining chicken tenders. Spray tops of tenders generously with cooking spray.

Bake in a preheated 425°F oven 6-7 minutes. Turn tenders over and continue baking 6-7 minutes or until chicken reaches an internal temperature of 170°F on an instant read thermometer.

Serve with your favorite dipping sauce.
