
CREAMY CAJUN CHICKEN & RICE



INGREDIENTS
- 1 tablespoon pure vegetable oil
- 1 pound boneless, skinless chicken breasts cubed
- 1/2 cup chopped onion
- 1 tablespoon Cajun seasoning
- 1 10.5 ounce can 98% fat free cream of chicken soup
- 2 cups skim milk
- 1 cup long grain white rice
- 1 14.5 ounce can diced tomatoes with green chiles drained
DIRECTIONS
In large skillet, heat oil over medium-high heat; add chicken, onions and Cajun seasoning.
Sauté until browned (about 3-5 minutes). Add soup, milk and rice; bring to a boil.
Reduce heat; cover. Simmer 20 minutes, stirring occasionally, or until rice is tender. Stir in tomatoes; serve.
