
CURRIED CHICKEN & PEACH QUINOA SALAD



INGREDIENTS
- 1/2 cup nonfat plain Greek yogurt
- 1 tablespoon lemon juice
- 1/2 teaspoon organic curry powder
- 8 ounces boneless, skinless chicken breasts cooked and chopped
- 1 cup cooked red quinoa
- 1 cup chopped organic peach slices in juice drained
- 1/4 cup organic California raisins
- 1/4 cup chopped roasted almonds
- 4 cups organic baby spinach chopped
DIRECTIONS
In medium bowl, combine yogurt, lemon juice and curry powder.
Add remaining ingredients and toss to coat. Salt and pepper to taste.
Serve immediately.
