CURRIED CHICKEN & PEACH QUINOA SALAD

INGREDIENTS
  • 1/2 cup nonfat plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon organic curry powder
  • 8 ounces boneless, skinless chicken breasts cooked and chopped
  • 1 cup cooked red quinoa
  • 1 cup chopped organic peach slices in juice drained
  • 1/4 cup organic California raisins
  • 1/4 cup chopped roasted almonds
  • 4 cups organic baby spinach chopped

DIRECTIONS

In medium bowl, combine yogurt, lemon juice and curry powder.

Add remaining ingredients and toss to coat. Salt and pepper to taste.

Serve immediately.
